H: Hubs, Wheels and Tyres Wheel building

I'm going to lace up wheels for my twin, and have not done Vincent wheels before.
Interested in any advice, and have two questions at this point.

First is- my old wheels were laced symmetrically; leading spokes all on inside of the spoke flange, and trailing spokes all outside.
However, I've seen both this method, as well as spokes reversed side to side, and haven't come up with a compelling reason to use one over the other.
Perhaps asymmetrical was used when it was more popular to be using two different rear sprockets?
My preference would be staying with the symmetric lacing utilized with the old wheels, for no other reason than they'd be, well, symmetric.
Any thoughts pro or con for either method?

And second- It appears lacing can be done either with or without the drums installed.
Again, any reasons to favor lacing with or without drums in place?
Thanks in advance.
Best-
George
